I found this recipe in a Colorado Jr. League cookbook and I make it quite often because it's delicious, high-altitude friendly, and super easy. It's actually called "Sad Cake" but because it rises fairly high and then caves in in the middle, it's a perfect recipe for my upcoming YA novel, LIFTED.
Okay, here's the recipe:
1 pound light brown sugar
4 eggs, well beaten
1/2 cup vegetable oil
2 cups biscuit mix (I use low-fat Bisquick)
1 t. vanilla extract
1 cup chopped pecans
1 7-oz package flaked coconut
Mix sugar with eggs. Stir in oil, then biscuit mix a little at a time, until well mixed. Add vanilla, pecans and coconut. Bake in an ungreased 9x13 inch pan at 325 degrees for 45 minutes. Serve with whipped cream or ice cream.
