Book Cooks: Sad Cake from Wendy Toliver

I love doing blog series, because I get to meet entirely new people (and books!). So please welcome new friend Wendy Toliver, author of two Simon Pulse romantic comedies: THE SECRET LIFE OF A TEENAGE SIREN and MISS MATCH. I found this recipe in a Colorado Jr. League cookbook and I make it quite often because it's delicious, high-altitude friendly, and super easy. It's actually called "Sad Cake" but because it rises fairly high and then caves in in the middle, it's a perfect recipe for my upcoming YA novel, LIFTED.

Okay, here's the recipe:

Lifted Cake

1 pound light brown sugar
4 eggs, well beaten
1/2 cup vegetable oil
2 cups biscuit mix (I use low-fat Bisquick)
1 t. vanilla extract
1 cup chopped pecans
1 7-oz package flaked coconut

15-24 servings

Mix sugar with eggs. Stir in oil, then biscuit mix a little at a time, until well mixed. Add vanilla, pecans and coconut. Bake in an ungreased 9x13 inch pan at 325 degrees for 45 minutes. Serve with whipped cream or ice cream.

  2. I might lose lots of friends over this but chocolate cake is not my favorite. I'm much more of a carrot cake or coconut cake fan, or spice cake with cream cheese frosting. Actually, anything with cream cheese frosting.

    Actually, being gluten-free, I've had to hunt for cake recipes, and it's true that cream cheese frosting makes everything taste better!
