Book Cooks: Coffee Jelly from Holly Schindler

Today is a busy day - in just a few hours, I am heading off to Greg Pincus' social networking training camp, sponsored by SCBWI WWA. Caffeine will be essential to survival!

Luckily friend and fellow 2010 debuter Holly Schindler (watch for A BLUE SO DARK in 2010!) came to the rescue with her recipe for Coffee Jelly. Holly says:


I'm an insane coffee junkie (I actually think that coffee and WRITING are a more delicious duo than coffee and donuts)! My love of coffee has even started to bleed into the dessert world. Here's a super easy recipe:


What you need:

1 envelope unflavored gelatine
1/2 cup cold water
1/3 cup granulated sugar
Dash of salt
1 cup hot coffee
1 teaspoon lemon juice


In a medium bowl, sprinkle gelatine over cold water. Add sugar, salt, and hot coffee. Stir until gelatine dissolves. Stir in lemon juice. Refrigerate until set. Serve topped with whipped cream.

Voila! A coffee dessert fit for a writer who's spent the entire day pounding the keyboard...

    Coffee jelly sounds intense, even for me. But I had to post to say I love your new blog banner!

  2. Thank you, Kirby! Lol, I haven't tried it yet, but I was thinking it sounded pretty good on a lemon scone... I'm mostly a tea-drinker myself (chai-style, of course), but every once in a while, coffee hits the spot.

    Btw, Greg's workshop was great! I hope to post more about it soon.
