Mrs. Ziyal of Café Shiraz loves her some hummus, a tasty treat made from chickpeas (garbanzo beans), ground cumin, and olive oil. And this is also a favorite in the Cupala house!
A 20 oz. can of chickpeas, drained (save liquid)
1/4 Ground cumin + more to taste
2 TB Tahini paste (ground sesame seeds)
Extra virgin olive oil
A food processor
Optional: garlic, plain yogurt, fresh herbs
Put chickpeas in the food processor and drizzle with olive oil (start with about 2 TB). Blend and check consistency. If it's too dry, add more olive oil (or the liquid from the chickpeas, if you're watching oil intake). You can also use plain yogurt to make it creamier and give it a tangy flavor. Blend in cumin and any extras. Sprinkle with a little paprika and garnish with parsley, then serve with sliced-up pita bread or veggies. Enjoy!
